It's just a compression cloud, and happens at sub-sonic speeds depending on airpressure and temperature.

It's a shame this video is completely wrong. Sonic booms being created is nothing to do with the pressure of the air, but with the length of the sound waves. Go look up the Doppler Effect on the internet, jackass.
